Grilled Chicken and Bamboo Rice (Ga nuong – Com lam)

This dish is a signature of the Central Highlands. The chicken is raised naturally and marinated with a blend of forest herbs, then grilled slowly over hot coals. The result is crispy skin with tender, juicy meat. It is served with "com lam" – sticky rice steamed inside fresh bamboo tubes. The rice absorbs the subtle aroma of the bamboo, creating a fragrant and satisfying meal.

This dish is traditionally served during festivals and family gatherings among ethnic groups such as the Ede and M’nong.
