Ba Be smoked pork sausage, or lap suon, is a specialty often made by ethnic communities in the Ba Be highlands, especially during festivals and the Lunar New Year. The sausages are made from lean pork and fat, mixed with garlic, chili, and mac khen – a signature forest spice with citrusy notes.
After being stuffed into natural casings, the sausages are hung to dry in the fresh mountain air and lightly smoked over kitchen firewood. This process gives the sausages a firm texture and deep, smoky aroma.
