Coi bien mai nuong (Grilled pen shell adductor muscle)
Coi bien mai is the chewy, sweet adductor muscle of the pen shell, a type of clam found off Phu Quoc’s coast. When grilled with scallion oil and peanuts, it becomes a flavorful island delicacy.
Unlike more common clams, pen shells are larger and meatier. Only the white muscle part is used for grilling, giving a firm and bouncy texture.
The scallion oil and crushed peanuts on top enhance the shellfish’s natural sweetness and smokiness.
Served on the half shell, it’s a perfect appetizer for seafood lovers visiting the island.
