Banh Xeo Oc Gao (Crispy Pancake with Rice Snails)

This is a regional twist on the classic Vietnamese pancake, using tiny river snails as the main filling. Banh Xeo Oc Gao is crispy, savory, and full of rustic charm. It’s both crunchy and chewy, offering a unique texture.

River snails (oc gao) are abundant in Ben Tre’s canals. Locals mix them with mung beans and bean sprouts before wrapping them in golden turmeric pancakes.


The snails are slightly chewy with a clean, earthy taste, pairing well with the crispy pancake. Dipped in sweet fish sauce, the whole thing bursts with flavor.


Usually eaten by hand, wrapped in lettuce and herbs. A full plate is colorful, fun to assemble, and great for sharing with friends.
