Mam Linh is the pride of Chau Doc cuisine – a hotpot made from fermented fish. Its strong aroma and rich, complex flavors are not for the faint of heart. But for adventurous eaters, it's an unforgettable experience.
Fermented fish (mam linh or mam sac) is stewed with lemongrass and coconut milk to create a bold broth. Added vegetables and meats balance out the strong flavor.
Despite the pungent smell, the broth is mellowed by coconut water and herbs. It’s deeply savory and full-bodied.
Mam Linh is a communal dish – great for group meals. Locals dip fresh veggies, meats, and rice noodles into the hotpot as it simmers at the table.
