Ca Loc Nuong Trui (Charcoal-Grilled Snakehead Fish)

Ca Loc Nuong Trui is a rustic countryside dish, featuring whole grilled snakehead fish served with rice paper and herbs. It reflects the simplicity and soul of Mekong cuisine.

The fish is grilled directly over fire without seasoning, often wrapped in banana leaves or skewered on sticks. The natural sweetness of the meat shines through.

Once cooked, the skin is removed, and the meat is wrapped in herbs and rice paper, dipped into tamarind or fish sauce. It’s a blend of smoky, fresh, and tangy.

Usually served on banana leaves in open-air settings. Locals enjoy the interactive aspect of rolling their own spring rolls.
